Some days you just have to take a moment and play with your food (or in this case drink.) Which is exactly what I did today when I decided to crack open my package of Organic Butterfly Pea Flower tea from Blue Chai. It's an herbal tea like no other I've ever seen.
It's a color changing tea. Seriously!
When someone told me there was a tea that changed colors (from brilliant blue to shocking pink) when you added an acidic ingredient like lemon or lime juice I thought they were pulling my leg. I'd never heard of such a thing, but it does exist and even though it sounded a little gimmicky I knew I had to try it out (if only to say that I had.)
It was a lot of fun to play with. In fact, my son and I spent several hours steeping up batches of tea and dropping in lime juice so we could watch the colors change from blue, to purple, and finally to bright pink. It was the perfect way to spend an cold, overcast day. I just hope that I don't need lime juice for anything this week because we ran through two bottles of it.
Now just in case you were wondering, I did stop my playing long enough to drink a few cups of tea. While hot, the tea reminded me of steamed veggies with a hint of something floral. I couldn't exactly pin-point the flavor of the veggies, but it was almost a cross between sweet peas and asparagus. I can promise you it tastes as odd as it sounds. Once it had cooled off it started to develop a slightly sweet background note and I found that I enjoyed it more.
Would I order this again? Not to drink. I didn't really care for the taste, but I do think it has a lot of potential uses in cooking. I'd like to order more to play with in the kitchen.

Serving Size: 2 grams or 1-2 teaspoons per 8oz
Water Temp: 212°F
Steep Time: 3-8 minutes
Alternate method (to obtain the cerulean blue color) use 1 flower per ounce of water and steep for 2 minutes with water just removed from boiling.
