Planning a 2nd Birthday Party and Chili to Feed a Crowd

My son's second birthday is fast approaching and a lot of planning goes into making special occasions such as this memorable. Granted, he won't remember them, but I sure will. I'll admit, I started planning this the day after his first birthday. I knew it would take me a year just to decide on the perfect cake. Pintrest is truly evil, a person could waste so many hours looking at all the photos, not that I would do that.

I decided last year that a chili buffet would be the plan for feeding such a large crowd. It turned out wonderfully so we'll do the same thing again this year. The weather up here in Wisconsin is just beginning to cool off in September so it is a great choice for us. Plus, I can make a lot of the main course ahead of time and only have the cake to worry about the day of the celebration. This keeps me out of the kitchen and able to celebrate with my family.

Anyway, by the time September 1st rolled around I had a fairly good idea of what I wanted to fix. I just needed to get some RSVPs from the crowd to see how many people I would need to feed.

Party Theme - Dinosaurs

All little boys love dinosaurs, so we can't really go wrong with this theme.

Main Course - Chili 

I have a Crock-Pot Trio buffet cooker that I use for large gatherings which allows me to easily cook multiple side dishes, or in this case, three types of chili. With so many people coming over one type of chili just isn't going to cut it. I'll be doing Hot, Medium, and White Chicken Chili so there is something for everyone.

Side Dishes 

Salad, Homemade Buttermilk Ranch, Buttermilk Cornbread, Crock Pot Baked Potatoes

Fritos, Cheese, Sour Cream, Diced Onions, Oyster Crackers

✔ Drinks 

Iced Tea, Beer, Bourbon

✗  The Cake 

I had the perfect cake all planned out until I had an everything is ruined forever moment. Turns out my son is allergic to chocolate just like his mama and my perfect cake idea needs some changes. I still have 16 days to figure it out. I'm not panicking, yet.

Ok, I've got the main event planned, but what do I feed the crowd the other two days?
