Mile High M&M Pie - No Baking Required!

A few weeks ago my little guy and I were out having brunch when he dropped a bomb on me—he didn't want a cake for his birthday, he wanted pie. Of course he didn't want just any pie, he wanted a pie like the one he was currently munching on from our new-favorite diner in Verona.

As heart broken as I was not to make a really cool looking cake like I usually do, I realized that I could absolutely get behind making pie because they're generally less time consuming to pull together. This one takes about 20 minutes as long as you have a food processor handy, which makes it the perfect last minute take-along for one of the many holiday parties in your future. It's also a great way to use up any leftover Halloween candy you have around the house, if you haven't already devoured it all—which we all know would never happen in my house. I have absolutely never eaten all the candy before Halloween, then had to rush out and buy more.

You believe me, right?

M&M Pie

 

Ingredients


for the crust

30 Oreo cookies
¼ cup salted butter, melted
deep dish pie plate
parchment paper

for the filling

16 ounces cream cheese, softened
⅓ cup sugar
2 cups Cool Whip, thawed
plain m&m candies
6 Oreo cookies, crushed

for the topping

4½ cups Cool Whip, thawed (see notes)
plain m&m candies
oreo cookies, crushed

Directions

 

  • Line your pie plate with a piece of parchment paper cut in to a circle or a pre-cut parchment round (see notes).
  • Using a food processor, crush 30 Oreo cookies (including their creme centers) until they are finely crumbled. Empty in to a mixing bowl, add melted butter, then stir well. Transfer to a parchment-lined pie plate, then press firmly in to place.
  • Using a food processor crush 6 more cookies and several handfuls of m&m candies, then set aside.
  • In a bowl combine cream cheese, sugar, and Cool Whip. Mix until well incorporated, then gently fold in the crushed m&m candies and Oreos. 
  • Transfer filling to the pie plate, top with remaining Cool Whip, then garnish with additional crushed m&m candies and Oreos. Serve immediately, or refrigerate until ready to serve. Enjoy!

Notes


I purchased a 16 ounce container of whipped topping, used 2 cups for the filling, and the remaining amount went on top of the pie. It should measure out to be approximately 4½ cups, although you don't really need to measure—pile it on top and be done. 

Don't skip the parchment paper! I really can't emphasize this enough. Your pie crust will be next to impossible to remove when it's time to serve, especially if you've refrigerated your pie for any length of time before serving. Cut out a circle of parchment paper or buy some pre-cut parchment rounds to make things a little easier. You can find them on Amazon, I'm partial to the 9 inch parchment rounds from Regency and use them any time I make a cookie pie crust or bake a cake.

The gummy worms were a last minute addition brought on by the fact that I had some sitting on our kitchen counter at eye-level for all of my son's friends to see. They're optional, but the kids loved them and ended up devouring most of the bag while I was trying to figure out where the birthday candle had wandered off to. I didn't find that stupid candle until the day after the party—go figure.

Lemon Pound Cake

I like cake. It doesn't matter what flavor—chocolate, vanilla, strawberry, salted caramel—I enjoy them all, but I'm especially fond of lemon pound cake. This is largely due to its simplicity as it's one of those rare cakes that doesn't need to be drowned in frosting to make it delicious. A thick slice coupled with a cup of coffee (or better yet some vanilla bean ice cream) has the power to make even the worst day a little brighter.

The trouble is, I don't often find myself with enough time for baking.

The good news is that pound cake can be made in advance and the flavor only improves as the days go by. I've been known to make one of these cakes, enjoy a small piece, then save the rest for a rainy day (or for those last minute guests that tend to turn up at my table on a regular basis.)

If you want my advice, if life hands you lemons don't waste them on lemonade, make a pound cake instead. Cake makes everything better.

Lemon Pound Cake

Lemon Pound Cake


makes 1 loaf


1½ cups sugar
2 sticks salted butter, room temperature
2 tablespoons lemon zest
4 large eggs
¾ cup buttermilk
2 tablespoons lemon juice
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Directions

  • Preheat oven to 350°F. Butter the insides of a loaf pan, line the bottom with parchment paper and set it aside.
  • In a mixing bowl cream together sugar and room temperature butter. Add lemon zest, eggs, buttermilk, and lemon juice then continue to mix until well incorporated. 
  • In a separate bowl combine flour, baking powder, and salt. Add the dry mixture to the wet ingredients and mix until smooth.
  • Transfer the batter to the greased loaf pan and bake for 65 - 75 minutes, or until a toothpick inserted into the center of the cake comes away clean.
  • Allow the cake to cool in the pan for at least 10 minutes before removing to a cooling rack. Cool in the pan for 10 minutes before removing to a cake platter or plate.

Loaf pans come in several different sizes, for this recipe you'll need a 1.5lb loaf pan like this one from Nordic Ware.

This cake is tasty when paired with ice cream (I'm partial to lemon and lavender or vanilla bean) but it's also quite good eaten on its own or topped with sliced strawberries and fresh whipped cream.

Hulk Smash Cake

There are very few things my little man loves more than his mother (or that's what I tell myself anyway) but if I'm being truly honest I rank right up there with his favorite stuffed animals, hot wheels cars, and super heroes. It's funny how the mind of an almost five-year old works, but I count myself as fortunate to be considered at the top of his list of favorite things. I know as he gets older that won't always be the case, so I'm enjoying every last second of it while it lasts.

This year as we sat down to talk about birthday cakes my little guy surprised me. I had assumed we'd be doing a Batman or Angry Birds theme, but instead he wanted to see Hulk, smash—right out of his cake. I kept with the trend of using his birthday gift as a cake topper (which is seriously the easiest way to decorate a cake) and rushed right out to buy a pair of oversized Hulk fists. Three stores later I somehow managed to turn up completely empty, it seems giant Hulk hands were not the "in" toy this year. Of course I didn't let this stop me, I hopped on Amazon and 2 days later they showed up on my front porch, just in time to go on top of the cake. 

If you're looking for an easy DIY cake for your superhero fan, this one couldn't be easier and as an added bonus it's covered in Oreos—because seriously, who doesn't love Oreo cookies?

Hulk Smash Cake | Not Starving Yet

Ingredients


2 nine inch cake layers, any flavor
2 cups dark chocolate buttercream frosting
1 pair of Hulk hands (see notes)
2 packages of Oreo cookies, cream center removed (see notes)
number candle

Directions


Before beginning make sure to allow your cake layers to cool completely, otherwise your buttercream will melt.

  • Place the bottom cake layer on a plate or cake stand, cover the top with a good-sized portion of buttercream, then place the second layer on top.
  • Wrap one of the Hulk hands in plastic wrap any place it will come in to contact with the frosting (this makes cleanup a lot easier when you’re done.) Cut away part of the top cake layer, exactly the same size as the bottom of your Hulk hand and place the hand firmly into the layer of buttercream to help keep it stable. Use the remaining buttercream to ice the top and sides of the cake.
  • Remove the cream center from your Oreos, crumble the cookies, and place them around the Hulk hand. Add your number candle, making sure to keep it far enough from your Hulk hand that you won’t accidentally melt it when you light the candle. Serve the cake immediately, preferably with a side of mint chocolate chip ice cream.

Notes
 


While double stuffed Oreos are far superior for eating you’ll end up with fewer chocolate cookies per package. I suggest sticking to regular Oreos for this project (and buying a package of double stuffed to munch on while you work.)

If you're having trouble finding hulk hands locally they're fairly easy to come by online. I used a set of Hulk Gamma Grip Fists that I found on Amazon.
